1. Mixed Mushroom Flatbread Pizza

Ingredients

-2 naan or flatbreads

-1 cup mixed mushrooms, torn

-1 cup mozzarella

-1 tbsp olive oil

-1 clove garlic, minced

-1 handful arugula

-Balsamic glaze for drizzling

Instructions

Preheat oven: 425°F (220°C).

Assemble: Brush flatbreads with olive oil, sprinkle garlic, top with cheese and mushrooms.

Bake: 8–10 minutes until cheese is melted and bubbly.

Finish: Add fresh arugula and drizzle with balsamic glaze.


2. Lion’s Mane “Crab” Cakes

Serves: 4

Ingredients

-1 lb lion’s mane mushrooms, shredded by hand

-1 cup breadcrumbs (panko works great)

-¼ cup mayo

-1 egg

-1 tbsp Dijon mustard

-1 tbsp Old Bay or Cajun seasoning

-1 tbsp lemon juice

-2 tbsp parsley, chopped

-2 tbsp oil for frying

Instructions

Prepare the mushrooms: Sauté shredded lion’s mane in a dry pan until moisture evaporates. Cool slightly.

Mix the batter: Combine mushrooms, breadcrumbs, mayo, egg, mustard, seasoning, lemon, and parsley. Form into small patties.

Pan-fry: Heat oil over medium. Cook patties until golden brown, 3–4 min per side.

Serve: Pair with remoulade, aioli, or a squeeze of fresh lemon.


3. Mushroom & Spinach Frittata

Ingredients

-8 eggs

-1 cup milk or cream

-1 lb mushrooms, sliced

-2 cups fresh spinach

-1 cup shredded cheese (cheddar, gruyère, or mozzarella)

-1 tbsp butter

-Salt & pepper to taste

Instructions

Preheat oven: 375°F (190°C).

Cook filling: Sauté mushrooms in butter until browned. Add spinach, cook until wilted.

Mix eggs: Whisk eggs, milk, salt, and pepper.

Combine: Pour egg mixture over veggies in an oven-safe skillet. Top with cheese.

Bake: 20 minutes or until eggs are set. Cool slightly before slicing.


4. Garlic Butter Mushroom Pasta

Ingredients

-12 oz pasta (spaghetti, linguine, or fettuccine)

-1 lb mushrooms, sliced

-4 cloves garlic, minced

-½ cup white wine or broth

-3 tbsp butter

-2 tbsp olive oil

-½ cup grated parmesan

-Salt, pepper, and fresh herbs (parsley, basil)

Instructions

Cook pasta: Salted boiling water until al dente. Reserve ½ cup cooking water.

Cook mushrooms: Heat oil + butter, sauté mushrooms until browned. Add garlic for 1 min.

Deglaze: Pour in wine/broth, simmer until slightly reduced.

Combine: Toss pasta with sauce, adding reserved water as needed. Sprinkle with parmesan and herbs.


5. Oyster Mushroom Stir-Fry

Ingredients

-1 lb oyster mushrooms, torn into strips

-1 red bell pepper, sliced

-1 carrot, julienned

-2 cups broccoli florets

-3 tbsp soy sauce

-1 tbsp sesame oil

-1 tbsp ginger, grated

-2 cloves garlic, minced

-1 tbsp honey or maple syrup

Instructions

Stir-fry: Heat sesame oil in wok. Add mushrooms, cook until browned.

Add veggies: Toss in pepper, carrot, broccoli. Cook 4–5 minutes.

Sauce: Mix soy, honey, ginger, garlic. Pour over veggies.

Serve: Over rice or noodles, top with sesame seeds if desired.


6. Mushroom Tacos with Cilantro-Lime Slaw

Ingredients

-1 lb mushrooms, sliced

-1 tbsp taco seasoning

-8 small tortillas

-2 cups shredded cabbage

-½ cup sour cream or Greek yogurt

-1 lime (juice + zest)

-2 tbsp cilantro, chopped

Instructions

Make slaw: Mix cabbage, sour cream, lime juice, cilantro. Set aside.

Cook mushrooms: Sauté with a splash of oil and taco seasoning until browned.

Assemble tacos: Fill tortillas with mushrooms, top with slaw. Add avocado or hot sauce if you like.


7. Chestnut Mushroom Soup

Ingredients

-1 lb chestnut mushrooms, chopped

-1 small onion, diced

-2 cloves garlic, minced

-4 cups vegetable broth

-½ cup cream (or coconut milk)

-1 tbsp butter

-1 tsp thyme

-Salt & pepper to taste

Cook base: Sauté onion and garlic in butter until soft. Add mushrooms, cook until browned.

Simmer: Pour in broth and thyme. Simmer 15 min.

Blend: Purée half the soup (or all, for smooth).

Finish: Stir in cream, adjust seasoning. Serve with crusty bread.


8. Creamy Mushroom Risotto

Ingredients

-1 ½ cups arborio rice

-1 lb mixed mushrooms (lions mane, oyster, chestnut), sliced

-1 small onion, finely diced

-4 cups vegetable or chicken broth, kept warm

-½ cup dry white wine (optional)

-2 tbsp butter

-2 tbsp olive oil

-½ cup grated parmesan

-Salt & pepper to taste

-Fresh parsley, chopped

Instructions

Sauté the mushrooms: Heat olive oil in a large skillet. Cook mushrooms until golden brown, remove and set aside.

Cook the aromatics: Add butter and onion to the same pan. Cook until translucent.

Toast the rice: Stir in arborio rice, cook 1–2 minutes until lightly toasted.

Add liquid gradually: Pour in wine (if using) and let it absorb. Add broth, one ladle at a time, stirring often, letting the rice absorb before adding more.

Finish it off: Stir in mushrooms, parmesan, salt, and pepper. Top with parsley and serve hot.
